Mint Chocolate Avocado Bars

Ingredients to make these Mint Chocolate Avocado Bars

Base:

  • 1 ½ cups almond flour/meal
  • ¼ cup maple syrup
  • ¼ cup JOYÀ Calm Cacao Superblend (or raw cacao powder)
  • 2 tablespoons avocado oil (or coconut oil)
  • ¼ teaspoon sea salt
  • ¼ teaspoon pure mint extract (or 1/8 teaspoon for a more delicate mint flavour)

Avocado Centre:

  • 1 medium avocado (about ½ cup)
  • ¼ cup maple syrup
  • ¼ cup cashew butter
  • 2 large pinches salt
  • 8 fresh mint leaves
  • 15 drops pure mint extract (or 10 drops for a more delicate mint flavour)

Chocolate Coating:

How to make these Mint Chocolate Avocado Bars

For the base:

  1. Combine all the ingredients for the chocolate base into a mixing bowl and stir to combine.
  2. Once a dough has formed, press it into a parchment paper lined standard (9×5) sized loaf pan.
  3. Place into the freezer while making the avocado center.

For the avocado center & chocolate layers:

  1. Add all the ingredients into a food processor and blend until creamy and smooth.
  2. Spread the avocado layer onto the chocolate base and return to the freezer for 3-4 hours.
  3. Melt the chocolate chunks over a double boiler and spread over the frozen avocado layer.
  4. Return to the freezer to firm up for another 2-4 hours or overnight.

To finish:
  1. Remove from the freezer and cut into bars.  Keep any uneaten bars in the freezer – they will melt at room temperature.
