Cacao Elixir Banana Pancakes

You'll find a version of a pancake in cuisines all around the world. From the French crepe, to the Dutch Baby in the Netherlands to Indian Uttapams and Japanese Okonomiyaki. Some are thick, some are fluffy. Some served savoury or sweet. Some are baked, while others are fried. The variations are endless, which make the humble pancake truly a wonderful thing. 

As self-proclaimed pancake mega fans, we live for a tall stack. In fact, it's one of our favorite non-drinklable ways to include the adaptogenic Elixir Blends into our daily routine. We figure, why only top pancakes with powerhouse ingredients when you can add them right inside the batter?! The Cacao Elixir Blend adds chocolately goodness along with antioxidant rich, immune and stress-supporting benefits not typically found in the average flap jack. How's that for delicious and nutritious?

Ingredients

  • 2 large eggs

  • 6 tbsp — ½ cup coconut milk (or other milk of choice)*
  • ½ tsp vanilla extract
  • ½ large banana
  • 2 tbsp almond flour
  • 2 tbsp cassava flour
  • 1 tbsp mesquite flour (or another tbsp cassava or almond flour)
  • 2 tbsp JOYÀ Cacao Elixir Blend
  • ¼ tsp sea salt
  • 1 tsp baking powder

*Use more liquid for looser batter / thinner pancakes, less liquid for thicker batter/ taller pancakes. Start with ¼ cup and adjust from there after blending.


Instructions

Blender version

  1. Add all ingredients to a blender jar, starting with the wet ingredients and followed by dry ingredients. Blend until well combined.
  2. Wait a few minutes to let flour absorb the liquid and add more liquid if necessary.
  3. Meanwhile, preheat a griddle or non-stick pan to medium-high.
  4. Once hot, brush the griddle/pan with a small amount of oil, and add ¼ cup of batter per pancake. Let pancakes cook for about 2 minutes, until the bottoms are golden brown, the edges are set and the tops begin to bubble. Flip pancakes and cook for another 2 minutes on the other side. Transfer pancakes to a rack (or keep warm in the oven) and repeat with remaining batter.
  5. Top with toppings of your choice and enjoy!

Bowl version

  1. In a medium bowl, mash banana. Add eggs, milk and vanilla extract and whisk until well combined.
  2. Add flours, Cacao Elixir Blend, salt and baking powder and whisk again until well combined.
  3. Wait a few minutes to let flour absorb the liquid and add more liquid if necessary.
  4. Meanwhile, preheat a griddle or non-stick pan to medium-high.
  5. Once hot, brush the griddle/pan with a small amount of oil, and add ¼ cup of batter per pancake.
